Enzymatic Synthesis of the Fructosyl Derivative of Sorbitol

The aim of the study was to determine effect selected reaction parameters—temperature (37–57 °C), pH (5.8–7.9), substrates ratio (sucrose/sorbitol 0.5/1.5 1.5:0.5 (m/m)), and presence NaCl—on course fructosyl-sorbitol synthesis with an enzyme preparation (11 760 U/100 g sucrose) containing fructosyltransferase β-d-fructofuranosidase from Aspergillus niger. A mixture at least three fructosyl sorbitol derivatives obtained: two mono-fructosyl one di-fructosyl. highest content all combined 2.7 g/100 mL for 6.8–6.9, sucrose/sorbitol 1:1. Increasing temperature 37 57 °C reduced time required reach maximum product 5 2 h, while concentration did not increase. addition NaCl (0.63 M) extended h slightly lowered (from 2.74 2.6 mL).
